In the Kitchen: Copycat Rice A Roni Recipe

I try to keep things home decor/DIY related around here but there are times that I stumble upon or come up with a recipe that I can't help but share.  I had a hankering for some rice-a-roni (you know, that san francisco treat) which was pretty much a staple back in college, but in my old age I've become a bit anti-processed foods plus the grocery store was just sooo far away.

I've never been one to curb a craving, so I set out to make my own.  Here's how I made a copycat recipe that tasted exactly like the store bought brand without all those crazy preservatives.


What you'll need:


1/2 cup broken thin spaghetti or angel hair pasta
1 cup.  white rice
2 1/2 cups chicken stock
2 tbsp butter
1/2 tsp parsley
1/4 tsp salt
1/4 tsp pepper
1/4 tsp thympe


First, break up the thin spaghetti into pieces about 1/2" in size to make 1/2 cup.  Combine the rice and the spaghetti pieces together.  Melt butter in pan.  Brown rice & spaghetti mix in butter.  While browning, mix dry seasonings together.  Add chicken stock and seasonings to browned rice and spaghetti.  Cover and simmer for 20 minutes or until cooked through.

I didn't have any chicken stock so I mixed 4 chicken bouillon cubes in water.

That's it - just as simple (aside from breaking up the pasta) as the store bought version.  This will definitely be on rotation at our household.

  1. This post came at the perfect time! My kids and I have all been sick this week so I didn't have a chance to get to the store. I needed a side for dinner and wasn't looking forward to plain old rice. I had everything in my pantry to make this and it was a big hit. I am adding this to my rotation. Thanks so much!
